Highland Cattle Are Bred For Beef
Meat
Their meat qualities are outstanding,
they have very little surface fat making the meat marbled throughout.
The meat is lean, tender and succulent.
Hardy
Like all animals,
they flourish with tender loving care, but the highlands are
re-known for their ability to forage and hold their condition.
Handling of Highland Cattle
These animals tend
to be docile and relate well to gentle handling. But as with
all animals, always be aware they are heavy animals with horns.
During yarding it is recommended not to overcrowd them, as sometimes
because of the pecking order of all cattle, it can lead to some
bullying.
Hides
The hides are a long coat with 2 layers, a thick
under coat, and a course top layer which protects them from the cold,
therefore not laying a thick outer layer of fat - hence the marbled meat. |
